The first diet of the 3 Mac Diets is called The Mac Anti-Inflammatory Diet. This diet was designed to eliminate my resistance to losing weight after menopause. In fact, everyone, not just menopausal women, should prepare the body for fat loss. We found this prep diet very important in those that suffer from weight loss resistance. Would you just go to the gym and start lifting heavy weights? No! We discovered that I could not dive fork first into a diet and neither should you.
The Mac Anti-Inflammatory Diet assists in harmonizing my internal chemistry by decreasing my inflammation. Inflammation is the source of estrogen dominance and its side effect weight loss resistance. To eliminate by weight loss resistance, I had to decrease estrogen’s dominance by both increasing my progesterone to estradiol ratio while at the same time decreasing the source cause of estrogen dominance, inflammation. The best way to decrease chronic inflammation is through your diet.
The Mac Anti-Inflammatory Diet is an elimination diet. Step by step we had me eliminate pro-inflammatory foods from my diet. I discussed how I had eliminated estrogenic foods in my last post. Another pro-inflammatory food that I had to eliminate were Vegetable Oils. They are not really from vegetables. They should be called plant based oils. The oils that I eliminated were soybean oil, sunflower oil, corn oil, canola oil, cottonseed oil, and safflower oil.
Yes! I know that high places tell me that vegetable oils are good for me. BS! Excuse me! These fats can cause some serious harm. They contribute to chronic inflammation and to chronic diseases in a big way. More importantly, they cause me to be even more resistant to weight loss. Let me explain just a few of the points that make vegetable oils “The Bad Fats”
Those Pesky Food Engineers Took The God Out Of Them
You may recall the story my husband told about growing up in the Yucatan. He would ride horses and pick sugarcane off of the slow passing trains. He would chew on the cane as he rode. That is the way God intended us to consume sugar. Instead, food engineers took a good thing and made it bad. They extracted the sugar out of the cane. We went from chewing on a piece of sugarcane to savor a drop of sweetness, to being able to consume a the sugar from a whole sugar cane in a no time at all.
Fact: The average refined sucrose sugar consumption in the U.S. is approximately 66.6 lbs. per person per year. How many stalks of sugarcane are needed to produce that amount sugar?
222 stalks of sugarcane.
Now, if you consumed sugar like God intended, do you think there is anyway that you would consume 222 stalks of sugarcane and that means that you would have to chew out every last drop of sugar? We are only talking about refined sugar here. We consume another 62 pounds of corn derived sweeteners per year on top of the refined sugar.
That is exactly what we have done with vegetable oils. The engineers pulled all the fat out of the plants so instead of consuming a drop of fat from a plant, now we can gulp it down.
Fact: Soybean oil accounts for 7% of all the calories American consume. That’s a travesty!
Vegetable Oils Inflame and Destroy
You have probably heard about two different kinds of fats called omega 3’s and omega 6’s. These are what scientists call the essential fatty acids because our bodies cannot make them. Just like we need a certain ratio between our progesterone and estradiol to be considered balanced or in harmony, we need a certain ratio of omega 3’s to 6’s. Before our food became manmade, our ratios were 1 to 1 to 1 to 3. Today they are more like 16 to 1 and my husband has even seen 50 to 1 in his practice.
Omega 3 and 6 fatty acids both make eicosanoids. These hormone like substances control inflammation at the cellular levels.
The eicosanoids made from omega 6’s are pro-inflammatory!
The eicosanoids made from omega 3’s are anti-inflammatory!
Vegetable oils are filled with omega 6’s. They cause our 6 to 3 ratio to become imbalanced. When there are more omega 6’s than 3’s, you will inflame at the cellular level. Inflammation, especially at the cellular membrane level that this ratio affects, we will have hormonal disruption, estrogen dominance and weight loss resistance. Alos remember that chronic inflammation at the cellular level is associated with with being the source cause of cancer, diabetes, heart disease, strokes, Alzheimer’s, hormonal disruption and obesity.
Vegetable Oils Are Filled With Trans Fats
There is one fat that is worse than vegetable oils. Trans Fats! They are so bad the U.S. government has banned trans fats. Most other countries did this a long time ago. We have all heard about how bad these fats are. I mean just look at the boxes of process foods. They stamp on the cover NO TRANS FATS!. These processed foods were the main culprits of putting Trans Fats into our bodies and now they are trying their best to distance themselves from that toxic poison. These fats are very disastrous to our health. The unfortunate thing is we have been eating lots of trans fats for most of our life. We were actually told that they were better for us than God’s butter. Oh my! Remember the commercials? Trans fats and vegetable oils are more examples of going in the opposite direction when those in high places tell us to do something “that is good for us.”
Anyway, something you do not hear from the vegetable oils marketers, who tell you that vegetable oils are good for you is that that they have Trans Fats within them! Soybean and canola oils have the most. Did you know that when you eat a trans fat, it take the body 102 days to clear it from itself. If you ate a corn chip 3 months ago, the body is still trying to purge it.
I could write a whole post on just canola oil. For now how about this. God did not place canola plants on the earth. Man took a rapeseed plant and genetically modified it and wa la, we have a manmade plant. Beware when men play God!
Besides the chronic diseases already mentioned, vegetable oils have been linked to other diseases such as asthma, eczema and depression. There is even one study that links vegetable oil consumption to increased homicide rates, probably a stretch, but who knows?
Vegetable Oils Cause You To Store Fat
Since vegetable oils cause inflammation, these fats will actually place you into a fat storing state. Inflammation will disrupt your hormones, making you more estrogen dominant. Inflammation will cause your cells to be resistant to the hormones you do have. What this means is that when your cellular membranes inflame, they lose receptor sites that uptake hormones. When insulin cannot open the doors to let blood sugar into the cell, you become insulin resistant, the precursor of diabetes. The same thing happens to your other hormones. You become resistant to your thyroid, testosterone, and growth hormones. These are you metabolic hormones. If these hormones cannot enter you cell, your metabolism will slow. You will start storing more fat. As the fat swells the cells, there is a greater chance that the rafts that hold the receptor sites can be lost. This means you have less receptor sites uptaking the hormones, you become even more resistant. Why would you want to consume a manmade fat that makes you fat? I don’t and won’t!
These Fats Will Make You Burn Fat

What Makes The Menopause Diet Different
The Menopause Diet’s first concentration was on harmonizing my internal chemistry. I have personally learned that regular diets just would not work after menopause. Remember, I had owned several weight loss clinics prior to going into menopause. I knew a thing or two about weight loss. Menopause created a whole new ball game. We found that I had to address my internal chemistry first before I could lose the post menopausal weight gain.
